Depends. GW2 is often called the no-grind MMO, and it's true in terms of equipment. Exotic quality equipment is trivial to obtain, and above that, there's only Ascended, which does take effort, but is the ultimate gear level. As in it's the highest and will stay so, forever. That said, there's a cosmetics grind, if you so desire.

My rule of thumb is worth more than 2 ecto for orange, or 1 ecto for yellow = salvage. Random bags are harder to say, but typically don't pile up as much as other loot anyway. I like the dopamine from opening them, but if you don't want to fuss with managing multitudes of lower tier materials just to wind up on the tp anyway, just sell the bag.
Character slots serve different purposes. It's good for storage, farming or for different professions. But it can't replace bag slots. Character slots are 800 gems while bag slots are 400 gems at regular price (240 when they go on sale). Without additional bag slots, you'll be wasting tons of time at banks, vendors, moving items, etc.
